Yes. Just submit an affidavit and start homeschooling, just as you would if she were enrolled in public school. (Also, notify the cyber-charter school so that they will know to take her off their roles.)
You have many options regarding everything else. Your mention of "Earth Science" makes me think your daughter is in 7th or 8th grade, so high school credits would not be an issue. You can do what you choose to do for the rest of the year.
All of the days that she attended the cyber-charter would count toward the 180 that she needs. You would just have to do the rest in homeschooling.
