My understanding is that, if you have been homeschooling this year, all the work you do in the summer can count towards next year. Because of the June 30 portfolio deadline, it seems that the "official" homeschool year would run from July 1st to June 30th. I do remember some discussion on this site previously about counting work done before June 30 (for instance if you submit your portfolio at the end of May, but I do not know what the official word on this matter is.
