In general, the school year for home educators runs from July 1 to June 30. *ANY* work done during this year, formal or informal, can "count" towards your days/hours and your required subjects. Many families include experiences like summer camps, family travel, outings to historical sites, museums, or nature centers, and so on as "schoolwork". Any reading materials your child uses can be listed in your log, if you wish. Some home educating families keep math skills current by doing a bit of math each day - like practicing times tables, or using an internet-based fun math game.
As to work done in June after youīve finished the previous year - technically speaking, it isnīt part of the next year, but many families start working on the next yearīs portfolio early, and I have never heard of it being a problem.
Why not grab a few of your kidsī friends and do a week-long "botany camp"! What a fun project! They donīt even have to know youīre counting it as "school"!
