Basically, 120 hours = one year´s credit.
Think about the things he is likely to do in a year, and what category they might fit into. This will help you get a sense of what kinds of things you might want to keep track of.
Keeping the books for a farrier business = math.
Computing for other farm needs (fertilizer needed, hay produced, etc.) = math.
Reading farming magazines = science (biology). Reading accounts of others´ farming adventures = literature.
Writing to his congressperson about a farming bill = government
Singing/writing/listening to farming songs = music
And so on.
Along with him, you can consider what kinds of learning may be useful to him on his chosen path, and document as you go.
