You have several questions. Let me answer each in turn:
1. The courses that fulfill social studies requirements include history courses, civics, geography, and social sciences (i.e. economics, psychology, sociology, political science, etc.). The courses that fulfill arts/humanities requirements include foreign languages, art, music, philosophy, and theology.
2. Yes. You don´t have to teach math or science in 12th grade if you have at least 1 year each completed in 9th, 10th, and 11th grades. It´s not advisable to skip those subjects if your student wants to be accepted to a higher-level college, especially if he or she is going into a science or math-related field.
